I had to make dinner for my girls the other night and pasta seems to be always on their menu. I get a little tired of the tomato sauce and cheese version so I had the idea of using clams in mine. I cooked a pot of linguine and added tomato sauce for them, for me I sauteed sliced garlic with chili flakes in extra virgin olive oil, when the garlic turned golden I put a can of chopped sea clams in. Yes I know fresh clams would be better, but its a weeknight and I am not going to buy only a pound of clams from my fish guys in San Francisco, so canned it is. I tossed the pasta with the sauce and fresh chopped parsley from the garden. For added flavor and texture I added toasted bread crumbs at the end. It was really good and I will have to do a fresh clam version soon.

Banana leaf wrapped Pork Tamales

I had a package of banana leafs in the freezer waiting to be used for something, so making tamales sounded like a good idea. Frozen banana leafs are easy to find in well stocked Asian or Latin markets, I am sure if you are in the Southern States are Hawaii, fresh ones on the tree are a option. I bought a big chunk of pork butt which I seasoned and seared, then a long braise till the meat was very tender and easy to shred, I made a form of red chili sauce from dried chili peppers and tomatoes. Next was the dough made from a easy "just add water" masa flour, the real dough is a lot better then the instint but I did not want to spend all day making these. Next step was thawing the leafs and cutting into six inch squares which a held over a gas stove flame for a few seconds to soften them, I place a scoop of dough and then some pork on top, fold into a square package and place in a steamer basket. When steamer is filled, simply steam for half an hour and they are ready for your hot sauce to finish.

Vegetable Curry

I just got a craving for a spicy vegetable curry and had most ingredients on hand so into the pot it went.
I used a mixture of diced yellow onions and carrots, garbanzo beans, cauliflower flowerets, chopped garlic, mustard seeds and good curry powder. After a quick saute I turned the heat down and cooked it slowly till tender. Then it goes into a bowl with a dollop of cilantro-mint yogurt to cool the curry heat, I add a spoonful of very spicy mango pickle sauce for flavor and more heat.I just needed to serve warm naan bread with it, next time.

Breadsticks

With all the pizza I am now making with my new oven stone, I seem to always have extra bread dough.I sometimes use it to make these nice crisp bread sticks. I first roll out the dough and then simply top with different toppings like sesame seeds, grated cheese or maybe fresh chopped herbs. Then using a pizza cutting wheel, I then cut long thin strips which are then placed on sheet pans dusted with corn meal.The sheetpan(s) go into a 400F oven for 5-10 minutes untill golden brown and then they are done. Its really hard not to eat them all before they cool off. My Kids love them!
Caponata relish

Caponata is a Sicilian relish or side dish, it is eggplant with maybe olives, capers, garlic. Strong flavors that I like, I roasted thick eggplant slices with extra virgin olive oil, then chopped it with green olives, parsley, fennel, lemon zest, onion, garlic and more olive oil. I used it as a pasta sauce, but it can be used in sandwiches, pizza, etc..

Storm Black Out Dinner

It seems like we always get a big storm around the new year. Only three days into 2008 and we get slammed with a hurricane force storm, up to 8 inches of rain and winds up to 80mph in some parts of the bay. I came home from work to mild damage to my fence, palm leaves all over my yard and no power. This is not the way I want to start my weekend. I had noticed that my local market was open with generator power, so I stopped for something to cook on my working gas stove. The store did not have enough power for all the meat and fish cases, so everything was slowly getting warm. "Sell it or lose it" said the owner,everything was reduced in price to half off, it was a buying frenzy. I went with some big monster beef short ribs. At home with candles burning next to the stove the meat was seared till brown then allowed to braise for a few hours. A glass or two of wine helped keep me warm. Dinner was good then early to bed and power was restored by morning. Hot coffee in a warm house for breakfast helped erase thoughts of the cold dark night.

Lemon drop cocktail

There is a tradition at my brothers house of serving lemon drop cocktails for any reason, I am sure that he being a liqueur distributor and his wife being of Russian decent have nothing to do with it? Anyway they are very good and its hard to count how many you have had.

The idea for doing this blog is my answer to writing a book without dealing with publishing companies, also there is not a clear format to this blog other then food related topics. Maybe one day there will be a book, but for now this will have to do. I have found that I cook more from scratch now then ever before, I get more enjoyment from my own pasta, sauce or breads, its all about the quality of each ingredient.

Christmas Posole Soup

Posole soup is a Christmas tradition in Mexico and its becoming one here too, at least at my house. Its a soup of pork or chicken with the addition of hominy. Hominy is corn that has had the outer layer of skin from the kernel removed. The flavor of the soup is like a liquid corn tortilla. The best part is that you have a steaming bowl of soup that you finish with your choice of shaved lettuce, cilantro, jalapeno, avocado, fried tortilla strips, tomato and a squeeze of lemon or lime. I like mine spicy with tons of cilantro and avocado.

Clement Street fish market

Here is some recent shots taken from a fish market on Clement Street in San Francisco. Clement Street is a long street on the Western side of the city and its a big mix of mostly Asian businesses and restaurants. Its known as the non touristy Chinatown for locals. I shop the Clement street neighborhood all the time and this fish market is really good because of the freshness and high volume.High important when buying fish because its not sitting on ice for days waiting for someone to buy it. This market has all the normal tanks of live fish, crabs and prawns as well as a huge display of local fresh fish on ice. By the way the live frogs and turtles are not for pets if you know what I mean.Ribollita, Vegetable Soup Italian Style

Its the holiday season and everyone is eating a lot of unhealthy foods. Here is a good winter soup that is made for cooking in big batches and reheating.Ribollita is a very rustic Tuscan soup who's name translates to "reboil". Its simply made with diced carrot, celery, fennel, onion and garlic. Saute in olive oil till soft then add precooked white beans and water or chicken stock. Add roughly chopped chard or kale. Simmer for about 30 minutes, check seasoning and serve with crusty bread and a splash of extra virgin olive oil.

My newest kitchen toy

I have been really into making breads and pizza's lately but what I have been lacking is a oven stone to devolp a crispy crust. With a big well stocked restaurant supply store near work it was a easy decision to buy one, they run around $50 dollars and you just put in on the lower rack. I crank up the oven to 500F and wait for about 20 minutes for the stone to absorb the heat.Then using a pizza peel dusted with corn meal I slide the pizza's off and on to the stone. In less the 10 minutes its brown and crispy with the cheese bubbling.

Risotto of Roasted Sweet Potatoes and Sage
Next to making pasta with what ever you can find in your house, a basic risotto is easy. It can be flavored with anything you have on hand. In the Summer it can be fresh corn, peas or maybe asparagus. The long winter season is perfect for comfort ingredients like root vegetables. This risotto was just whole oven roasted sweet potatoes with the cooked pulp removed and added during the last cooking stage of the rice. Finished with fresh chopped sage and shaved Parmesan cheese. Great by itself or as a side to maybe roast pork.

Easy Bread

Some people like the smell of fresh baked cookies, but I love the smell of bread right out of the oven. I always keep a supply of good quality locally ground flour and dry yeast packets for when I want to bake. Having a kitchen aid stand mixer with a dough hook is also a big plus. I most often just make a basic flour, water, olive oil dough, allow to proof once then spread out on a sheet pan, then more olive oil and sea salt sprinkled over the top. Let it proof a second time then place into a hot oven, 15-20 minutes later its bread!
